You may wonder…what is trippa (tripe)? It is part of the interiors of a cow or a veal. It actually is one of the stomachs of the bovine. Not to be confused with lampredotto, which is the last stomach of the bovine, the abomasum. Tripe is made of the first three stomachs, the rumen, reticulum and omasum. And it is one of the few adult bovine parts that are allowed to be sold on the grocery market Tripe can be found already half cooked, salted, or pre-soaked. A fun little wine contest started last May 28. Wine lovers now have the possibility to win their bottle of excellent Morellino di Scansano while enjoying excellent food in one of the many Tuscan restaurants that take part to the contest. The Tuscany Region in cooperation with the Alberese Farm started the Squillami, ring me, promotion with the help of 76 excellent restaurants on the Tuscan territory.
